Make your own Wild Garlic butter
The season of wild garlic is here, and this homemade, creamy butter only takes a few minutes to make and is a simple yet delicious way to capture this herb’s delicate, aromatic flavor.
It's perfect on anything grilled—meat, fish, veggies, corn on the cob, a slice of sourdough or your fresh potatoes as a seasonal side.
Recipe:
150 g butter
40 g wild garlic
1 tsp flaky sea salt
Zest from 1 lemon
How to:
- Let the butter soften at room temperature
- Grate the zest of one lemon (adds a fresh flavor)
- Mix everything using an immersion blender
- Blend until it’s a smooth, creamy green butter
- Roll it up in parchment or plastic wrap and store in the fridge (or freeze for later)
